Pumpkin Apple Butter

If you’re from the Southern United States, chances are good you’ve eaten a biscuit with apple butter. A warm buttery biscuit slathered with apple butter is a fall tradition in my house.
A few years ago someone gave me a jar of pumpkin butter for Christmas. Wow, what a heavenly gift. Ever since then I’ve been searching for just the right recipe to make my own.
This just might be it. Try it out and tell me what you think.
Ingredients:
- 1 (29 oz) can solid packed pumpkin
- 2 cups apple cider
- 1 cup applesauce (no sugar added)
- 1 cup organic sugar
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
Directions:
Combine all the ingredients in a large saucepan (or Dutch oven, if you have one) and simmer uncovered for 2 hours. Stir it occasionally. When it’s nice and thick (like apple butter) turn off the heat and let the butter cool. Pour into freezer containers.
You can refrigerate it up to 1 month or freeze up to three months.
