Holy Goulash, Linda!

I’ll let you know up front, this is a non-traditional goulash recipe. It’s closer to what my Home-Ec teacher taught us to make than it is to the classic Hungarian dish. Speaking of Home-Ec, wouldn’t Paula Dean make a great Home Economics teacher?

Anyway, this is a hearty one-pot dish.Gotta love, one-pot anything if you’re a wife/writer/web-designer/homework-helper/errand-runner/football-mom type.

So here’s to ‘almost’ real Goulash

Cook Time: 50 minutes

Ingredients:

  • 2 cups elbow macaroni
  • 1 pound ground turkey
  • 1  cup (8-ounce) salsa (medium)
  • 2 teaspoons powdered garlic
  • 1 can (15 oz) black beans
  • 1 cup frozen corn (optional)
  • Salt and pepper (optional)
  • Low-salt chicken stock (optional)

Cook pasta according to package directions, drain, set aside. While the pasta is cooking, brown ground turkey. Drain well. Add salsa, black beans, and corn (if desired). Cook for 40-50 minutes, stirring frequently.

Add pasta and pour into 3 quart glass casserole. Season with salt and black pepper to taste. If you like your goulash a little more loose, add chicken stock until you have the consistency you like. Personally, I like mine chunky.

  1. Interesting. I have all these ingredients. I think I’ll try it. Looks so easy. Maybe I don’t need a chef. I might just be trying to cook the wrong things. I think I’ll try grilled chicken though. Ground turkey will make it greasy won’t it. I guess not. I’ll try it. Thanks!

  2. Hi, Rhonda. Thanks for dropping by. The ground turkey won’t make it greasy. I use it all the time. Just be sure to drain it well on a paper towel before placing it back in the pan. Try it and let me know what you think.
